I love granola… for breakfast and dessert. Unfortunately though, most of my favorite granolas tend to be pretty unhealthy, so I decided to make my own. I used ghee instead of oil and maple syrup instead of sugar. It’s light, scrumptious, and the perfect pick-me-up for any time of day!! Especially with some fresh fruit… love me some fruit in the morning.
INGREDIENTS:
2 cups oats (use gluten-free if desired)
1/2 cup almonds
1/4 cup pepitas (pumpkin seeds)
1/8 cup shredded coconut
1/8 tsp cinnamon
1/8 tsp vanilla
1/4 cup pure maple syrup
1/8 cup ghee, coconut oil, or butter
DIRECTIONS:
Mix all of the dry ingredients together in a large (9 x 13) baking dish
Heat ghee, maple syrup, and vanilla in microwave for 20 seconds, until melted
Stir in melted syrup/ghee into dry mix
Bake at 350 degrees for about 30 minutes, stirring about half way through
Let cool in a Tupperware or bowl
Serve and enjoy!!
