I love potato salad, even the Costco kind haha, but it’s usually soooo mayonnaisey that I can’t bring myself to eat it (I’m sort of a weirdo about mayo). Plus, I feel like I enjoy things so much more when I don’t have to feel guilty eating them! So here’s a basic recipe for some tasty potato salad that’s not totally smothered… just a little goes a long way here.
Serves 2
INGREDIENTS
4 large red potatoes, boiled
1/3 cup red onion, diced
1/3 cup pickles (about half large pickle), chopped
1/3/ cup celery, diced
1/3 cup red bell pepper, diced
1/4 cup fresh dill, chopped
1/8 cup fresh parsley, chopped
1/8 tsp thyme
1/4 tsp celery salt
1/8 tsp curry powder
1/4 tsp paprika
2 – 2 1/2 tbsp mayo
1 tbsp yellow mustard
salt & pepper, to taste
Chop ingredients so they are similar sized pieces
Cut boiled potatoes into bite-sized chunks
Put potatoes, veggies, and herbs in a large bowl and gently mix
Stir in mayo, mustard, and seasoning
Refrigerate for about a half hour to chill
Serve and enjoy
