I love getting to use leftovers… whether eating them just as they are or sprucing them up to create a whole new dish. Since I made quinoa stuffed peppers yesterday and had leftovers, I decided to make a fresh, hearty quinoa salad- the perfect round two re-do. I grabbed my leftover quinoa and just added various ingredients I found in my fridge that would compliment it well: feta, tomatoes, cucumbers, lemon, etc… great way to re-use and have a whole new dish!
INGREDIENTS:
First, you’ll need the quinoa from the

(If you don’t have feel like making it or don’t have it handy, a cup of regular quinoa will do, spruced up with some spices and such.)
I added:
1/2 avocado
handful of diced bell pepper
1/2 cucumber, chopped
some kalamata olives, chopped
a generous handful of feta cheese
2 fresh tomatoes, chopped
a handful of chopped cilantro
lemon juice, 1/2 lemon
salt & pepper, to taste
DIRECTIONS
Dump all of the ingredients into a bowl with leftover quinoa mix
Sprinkle with fresh lemon juice and salt & pepper
Refrigerate until hungry and voila… easy meal, round two!
