There are so many ways to make cauliflower… one of my more recent faves- mashed. It’s like having mashed potatoes, but way lighter. Mashed cauliflower actually has a pretty similar taste to mashed taters, of course depending on how you season ’em, but texture-wise, they’re way lighter, and nutrition-wise, way healthier. Cauliflower is actually an awesome veggie for the health-minded. Per 100 grams (about 1 cup), it has only about 25 calories, is super low fat, has no cholesterol, has about 2 grams dietary fiber (that’s 5% of daily value!) and 80% recommended vitamin C value, and many many minerals like potassium and manganese! In short, it’s good for you. So why not eat it!? I like mashed cauliflower as a side dish, but I’ve also thought it’d make a great topping for a Shepard’s pie type thing- instead of taters, I think it’d be good topped with this. It’s one of my next to-do’s in the kitchen… dying to try it!! Anyway, if you have some cauliflower lying around and don’t know what to do with it, this is easy, healthy, and quick. I happened to have cottage cheese lying around I wanted to use, so I threw it in. If you don’t have it, don’t worry… a little parmesan or sour cream (or no cheese at all) works, too…
Serves 4
INGREDIENTS
1 large cauliflower head (or 2 small)
2 garlic cloves, whole
3/4 cup milk
1/4 cup cottage cheese
1/4 fresh rosemary, finely cut
salt and pepper, to taste
chives, for garnish
DIRECTIONS
In a large pot, boil cauliflower and whole garlic cloves with a
dash of salt until soft, about ten minutes
Strain excess water
Using a food processor, blend the cauliflower, garlic,
rosemary, milk, and cheese together until creamy
Season with salt and pepper to taste and top with chives
Done!
