Seems in every post I am writing something about my obsessions with stuffing things or finger foods. Once again, I find myself writing about my excitement for stuffed foods. This time, it’s tomatoes.
I remember having a random day some time ago when I went on a stuffing craze- literally, I dug through my fridge and stuffed everything I could. See (found this in the archives), I went a little nutso… stuffed chicken breasts, zucchini, eggplant, mushrooms, tomatoes, and who knows what else I did that day haha.
Anyway, I stuffed tomatoes with all sorts of yummy salad stuff- avos, cukes, carrots, red onion, etc. I loved it. Since then, I’ve found myself stuffing salads into things more and more often… cukes work well, too- FYI. So while waiting for my dinner to cook this eve, I made a little snack to hold us over. Seeing as I currently have a plethora of tomatoes and some delicious fresh mozzarella, basil, avos, and cucumbers, I stuffed us some t’maters. It’s easy, quick, and a fun way to serve up veggies (I’m sure you could even fit some lettuce in there if you wanted!). Any tomato will work- I used a giant beefsteak tomato and a roma… whatever floats your boat!
For 2 stuffed tomatoes…
INGREDIENTS
2 tomatoes, any kind, but large
4 large slices of fresh mozzarella
1/2 avocado
1/2 cucumber
4 basil sprigs
*balsamic blend (I used balsamic vinegar, olive oil, agave, salt & pepper)
DIRECTIONS
For round tomatoes…
Remove stems, if any
Slice horizontally almost to the bottom, but not quite
Separate carefully with fingers to make spaces
Cut cheese slices in rounds and cut in half (semi-circles)
Thinly slice avocado and cucumber
Fill spaces with avo, cucumber, mozzarella, and basil
For taller tomatoes, such as Romas…
If needed, cut the bottom of the tomato so it is flat and stands
Cut out the inside and clean
Cut veggies and cheese into thinner and pointier shaped pieces
Stuff into center
Drizzle tomatoes with balsamic dressing and eat!
