I know this sounds weird, and that’s okay. To some, sunflower seed butter probably even sounds gross, but it’s really good (especially if you like sunflower seeds). I tried it for the first time years ago- my dad used to get all sorts of butters- macadamia nut, almond, cashew, etc, so I’m no foreigner to random nut-concoctions. Anyway, the other day, I was walking through my neighborhood health food store and a man was sampling this local made sunflower seed butter with Brazilian honey. I was hooked, instantly. So I bought a jar, came home, and whipped up these. Even my boyfriend, who was a little, no a lot skeptical, fell in love at first bite. I hesitate to even call them cookies ’cause they’re so different from the average store-bought Tollhouse chocolate chip type, but they are super yummy and a healthier take on a sweet treat. The texture (I’m not sure exactly why- I’m assuming it’s the sunflower seed butter) is insanely chewy and soft and moist. We gobbled them up quick- for the next batch, I’m thinking I will add some chocolate chips! There are so many variations that can be tried… and did I mention how easy they are? Literally a few minutes of mixing and stirring, toss in oven, and done!
INGREDIENTS
1/2 cup sunflower seed butter
1/2 cup shredded coconut
1/4 cup brown sugar
1/2 cup walnuts, chopped
1/8 cup maple syrup
1 small egg
1/4 tsp vanilla
1/4 tsp baking soda
1/8 tsp salt
DIRECTIONS
Preheat oven to 350 degrees
Mix all of the ingredients in a bowl and stir until smooth
*I start with dry ingredients, then stir the others
Using a spoon, evenly place cookie dough on a greased baking sheet
*Depending on how large you make the cookies, you should get about 9
Bake for about 12 minutes, or until cookies are golden brown
Let cool a little and enjoy
*To store, keep in an airtight Tupperware for up to a few days
