So technically, I shouldn’t call this Tom Kha… I guess Kha means “galangal” (a root similar to ginger), which this version doesn’t have (I used ginger). And if I’m going to get technical, I guess I might as well add that this would actually be called Tom Kha Toahu, to specify that it’s tofu. Anyway, enough technicalities, this is my version of the Thai classic, whatever you want to call it. I love Tom Kha- I get it every time I’m at ordering Thai. I have made it a few times before at home, but I have to say this was my best! In the past I have added lemongrass, but didn’t have any of that either- didn’t matter… great as was! Of all the things I’ve made recently, which has been a lot, I’d say this soup was one of my boyfriend’s and my faves. This is a tofu version, but you can use chicken, seafood, veggies, or whatever you feel like. I totally recommend it, and it’s super easy!
*I know it’s not the prettiest thing in the world, but I really don’t care how pretty something is when it tastes like this…
