Yay, it’s BBQ season… finally!! I love cooking and eating outdoors! I don’t have the most awesome outdoor set up (yet… someday I will have an entire outdoor kitchen!), but I still love this time of year. Nothing reminds me more of fun in the sun than watermelon… it’s so refreshing, light, sweet, and fricken amazing really. So, seeing as it’s Earth Day and beautiful out, why not use some fresh produce (thank you, Earth!) and whip up a quick, refreshing, healthy little lunch!? This salad is sooo easy, and a wee more exciting than your ordinary mix of veggies- something different 🙂 It’s light and the perfect complement to a sunny hot day!! Tossed with a little fresh mint and a lemon dressing drizzle… just plain yummers.
Makes 2 large servings, or 4 small
INGREDIENTS
For the salad…
2 cups seedless watermelon (about 1/4 small melon)
2-3 cups arugula
1/2 cup feta, crumbled or chopped
few leaves of mint
For the dressing…
2 tbsp lemon juice (about 1/2 lemon)
1/2 tbsp honey
2 tbsp olive oil
2 tbsp water
1/8 tsp salt
1/8 tsp pepper
DIRECTIONS
Cut watermelon into small bite-sized squares
Toss with arugula and feta
Chop up mint and sprinkle on top
Chill salad in fridge until ready to serve
To make dressing…
Squeeze lemon juice from 1/2 lemon into a cup or bowl
Add olive oil, honey, water, salt and pepper and whisk
This will make about 1/4 cup dressing…
Start by drizzling about half over the salad and add more as needed
Toss in dressing right before eating– you don’t want your salad soggy!

Our beautiful Spring day didn’t turn out as lovely as I had imagined it would be… yesterday certainly made up for it though! And yes, this is yummy and refreshing!! Didn’t you say you had the combo growing up in your house a lot? Yumm!
