Ummm… I really don’t think I have to say much about these. They kinda speak for themselves- they’re bananas covered in chocolate, almonds, and coconut… what’s not to drool over there?! They’re easy to make and well worth the little effort that goes into them. They’re simply amazing really. So get your bananas out, start melting some chocolate, and get ready to devour the best little Bluth hot summer-day treat…
INGREDIENTS
2 bananas
1/2 cup crushed/chopped almonds
1/4 cup shredded coconut, toasted
1/2 cup dark chocolate chips
1/8 tsp cinnamon
1 tbsp coconut oil
flat kabob skewers or popsicle sticks
DIRECTIONS
Mix chocolate chips, cinnamon, and coconut oil together in a microwaveable cup/dish
Heat for 30 seconds, check and stir, and then more as needed (I needed another 30)
Don’t let it burn! It should just be soft and liquidy 🙂
Crush or chop almonds and toast coconut lightly (heat in a pan until golden)
Set on a flat plate or surface
Peal bananas and cut in half
Carefully place on sticks
Dip into chocolate and cover completely
Press into almonds and then into coconut
Sprinkle/roll all over banana to cover
Doesn’t it look good already!!?
Place bananas on a wax paper covered plate (or other non-stick surface)
Place in freezer
Let freeze for about an 1 hour- they should be cold and frozen, but not rock solid
Good luck not eating them all in one sitting!!
