If you’re like me, you love any and all snacky finger foods you can just pick up and munch whenever you’re having a craving. Since I had a load of fresh kale stocked up from my last CSA, I decided to go for some kale chips… they’re easy, tasty, and more nutritious than most little munchy foods. I made two varieties… plain- with just a dash of sea salt- and toasted Parmesan. Both are easy and quick- only about 20 minutes from start to finish! And you don’t even have to feel guilty eating them 🙂
You can season kale chips however you want- the key is to not put
too much salt and to not drench ’em with too much oil… other than that,
they’re light and delicious with pretty much all herbs and seasonings!
Servings: one small batch of crunchy goodness
INGREDIENTS
fresh kale (about 2 cups of leaves)
1/8 tsp salt
1/8 tsp pepper
1 tbsp oil
*for Parmesan chips, 1 tbsp grated Parmesan (the powdery kind)
DIRECTIONS
Preheat oven to 275 degrees
Once kale is rinsed and clean, prep leaves…
Using a knife, cut the thick part of the stem out of each leaf
Then rip (or cut) leaf into smaller pieces… whatever size chips you want
Make sure that any large ribs are removed also (they’ll get in the way of your chip-munching)

Toss prepped leaves in a large bowl
Toss in olive oil, salt, and pepper and mix well
(no need to grease pan since leaves have oil)
After about 15-20 minutes, when crisp and dry (but not brown), lay
leaves on a paper towel to cool
Vuala, done… munch away!!
For Parmesan Chips…
Same idea… trim stems and break leaves into small pieces
Toss in a bowl with olive oil, salt, pepper, and Parmesan
Mix well and then lay flat on large baking sheet
Bake 15-20 minutes at 275 degrees, until crispy
Lay on a paper towel to dry and cool
Serve and nibble away!!
