So, I usually don’t post anything but recipes, but I just have to babble about this little creation- inspiration for a new recipe to come!! I made this random little concoction last night… may seem a little weird I know, but I just had to try!! It’s basically chard leaves wrapped around a veggie-quinoa filling (like an enchilada more or less) with a chard-arugula-basil pesto drizzled on top (had lotsa greens to use up!).
You may have heard me babbling about a CSA at some point- it’s awesome! If you have one around your town, totally recommend it- for about 11 bucks a week (I share with a friend), I get an amazing assortment of fresh seasonal produce right from the farm. Every Friday, I go pick up a new batch of seasonal goodness… best thing, besides it being organic and local, is that it helps out a local organization too- I do it through the SC Homeless Garden Project (http://www.homelessgardenproject.org/programs/csa.php), so it benefits both the community and my kitchen… double like 🙂
Anyway, had all this fresh chard, arugula, basil, onion, and zucchini taking over my fridge yesterday and had to do something with it all before it went bad… so came up with this here concoction on a whim- totally loved it! Used things up and talk about healthy! I’ll make it again and write a recipe to go with soon!! Love being forced to get creative 🙂
