I make this sweet little treat every peach season at least once or twice. It all started back in 2011… my CSA had our peach pile goin’ mad. I craved dessert, cranked my grill on high, and went to peach-heaven. I have since made these guys every summer for crowds big and small. I love them so.
You’ll notice these bottom peaches look ‘less enthused’ than those striped beauts above. While the taste won’t change, the aesthetics will if you don’t have that grill on high. Case in point- the peaches at the top were done on an indoor electric grill- with greased up grates that were hot and ready to leave their mark. The bottom peaches were placed on an outdoor grill that wasn’t greased well or hot enough. Lesson learned. Both taste lovely… one looks prettier to the eye. 😉
I’ve used this method with apricots and figs too- super mini-sized finger food treats. These also make fun crostinis… grilled peaches, sliced over baguette with a mascarpone spread and the honey sauce drizzled over the top. All are fun seasonal summer crowd-pleasers. Play around, see what you like!
Makes 4 treats
INGREDIENTS
2 peaches
1-2 tbsp ghee or butter
2 tbsp honey (I use raw, like this one)
1 sprig fresh rosemary, approx 4 inches long
3 tbsp mascarpone cheese
1 tsp fresh lemon juice
optional: a sprinkle of cinnamon
DIRECTIONS
Preheat grill to high…
Tip One: Both indoor and outdoors grills work great- the key is to have grates hot and greased up
Tip Two: Keep that mascarpone cold until use… the colder it is the thicker and creamier it’ll be!
Slice peaches in half, then place on grill for a couple of minutes, face down
Remove once grill marks have formed
To make sauce…
Add the ghee or butter, honey, and rosemary to a small sauce pan over medium heat
You can chop the rosemary leaves or just throw the thing in whole
*The ghee/butter says 1-2 tbsp because the amount will depend on the type of honey you’re using…
start with the smaller amount, then if too sticky or thick, add more 🙂
Once bubbling, turn the heat to low and keep warm until use
Meanwhile, stir the mascarpone and lemon into a bowl until smooth
Taste and adjust lemon levels as desired
To serve…
Places grilled peach halves face up
Take a scoop of lemon- mascarpone and plop it right in the middle of each peach
(I sometimes add a little sauce to the peach holes beforehand, but it all depends on how lazy I am at the time) 😉
Drizzle some rosemary-honey sauce all over those bad boys… I say the more the merrier
Sprinkle with some rosemary leaves if wanted and add a sprinkle of cinnamon if you feel so inclined
Dig in and devour!
