Who doesn’t love fresh salsa? I often make pico de gallo style salsa, chopped into chunks rather than blended, but the blended kind is great to make mass amounts of and keep for later. I have all of these wonderful tomatoes and peppers growing in my garden right now and was dying to use them. I actually spent the entire day making goodies with tomatoes… I made salsa, caprese sticks, tomato salad, soup… I went to tomato town! So this was a great way for me to use up both my peppers and tomatoes in one sweep. Plus, I LOVE salsa (like could drink the stuff from the bowl love), especially serrano salsa. Serranos are a spicy pepper with a delicious flavor… more flavorful than a jalapeno in my opinion- great for salsas! So I used just one, but kept the seeds in to add spice. Salsa is a personal preference kinda thing, so adjust the spiciness, saltiness, liminess, etc. however you want! That’s the beauty of this quick to make and addictingly tasty little stuff!!
So I whipped some up, which only takes a matter of minutes in a food processor or blender, baked up some tortilla chips, and dug in! This makes enough to jar and refrigerate, too. So nice to have around 🙂
So many lovely tomatoes and peppers! I should have made a triple batch!!
INGREDIENTS
6 large ripe tomatoes, any color
1 serrano pepper, seeds in
2 cloves garlic
1 small yellow or white onion
large handful fresh cilantro, about 1 cup
3/4 tsp salt
2 limes, about 2 tbsp lime juice
DIRECTIONS
Chop onion into large pieces and toss it in the food processor
Do the same to the serrano and garlic cloves
…And tomatoes
Get about a cup of fresh cilantro, cut off large stems, and toss is
Blend until well-mixed and smooth
Add salt and lime
Blend until smooth, taste, and adjust flavors as wanted
Pour into a bowl and save rest in a mason jar or tupperware
To make chips…
Crank oven to broil
Use your favorite tortilla- preferably one with high-quality ingredients
Cut into eight pieces, like a pizza
You could also do rectangle slices if preferred!
Rub/spray a baking sheet with a little oil
Arrange tortilla pieces on sheet so that they don’t overlap
Drizzle/spray them with a teensy oil and sprinkle with a little salt
Broil for a few minutes only- NOT LONG, until golden brown
(Alternatively, you could bake at a lower temp and
then flip to toast both sides… this is quicker 🙂
