These are quick, easy, and oh my goodness are they scrumptious. I made this batch, and then ended up making three more right after. Couldn’t. Stop. Eating. Them. I have since decided that they’re a great appetizer for pot lucks, dinners, or snacks for any time of day… just keep finding excuses to make them! This recipe post may make them seem more complicated than they really are- I babble a lot, but really it’s quite simple… heat grill, slice bread, spread goat cheese, and top with figs and easiest sauce ever. If you don’t have a grill, no worries! The figs don’t have to be grilled and the bread can just be toasted in an oven.

They’re so delish. And this time of year, they’re everywhere!
Last week at my mom’s, we went on a produce picking spree and gathered buckets of figs- a happy me it made! Needless to say, I have been making fig everything lately…
figs galore in the figalicious household.
Lately I’ve been really into grilling fruit (the Grilled Peaches recipe is my other can’t-stop-making treat… I’ve been finding excuses to bust out the grill and make both those and these several times a week!!)
So I thought, why not grilled figs??!
The sugars blacken super quickly, so just a minute or two and they’re ready!
And so pretty too 🙂
The beauty of this treat, in my opinion, is it’s natural earthiness…
rosemary, honey, figs, and goat cheese- a great balance
of nature’s goodies- sweet, tangy, herby, and delicious!!
{no need to measure for this one… just get little handfuls and start crafting!!}
INGREDIENTS
1 small baguette
a handful of fresh figs
goat cheese
a few sprigs of rosemary
honey
ghee or butter
*you’ll want equal parts of honey and ghee/butter
for a small little platter of fig toasts for two- I found about 1 tbsp of each perfect
about 1/4 tsp rosemary is great for this amount…
DIRECTIONS
Preheat grill (I’ve used both an outdoor monster and an indoor electric- either works great!)
You want a high heat!!
You also want to make sure your grill is nice and
clean (and oiled if necessary) so figs will easily come off without sticking to grates!
Heat 1 tbsp ghee/butter and 1 tbsp honey together over low heat
(if adding more, just keep ratios equal)
Chop rosemary finely
Add to honey/butter and let cook over low heat
Once it begins to bubble, it’s hot and ready (easy right??!)
You want it nice and warm and saucy when you serve it (will turn sticky if cools)
You can either let it sit over low heat until ready
to use OR remove from heat and then reheat when ready
Slice bread into about 1/2 inch thick pieces
(the fresher the bread, the better this will be, naturally!)
Using a brush or whatever you have around, lightly brush a little melted
ghee or butter over each slice of bread
Place buttered side down on hot grill
This will only take a few minutes…
Slice figs in half…
And toss on grill with toasts
This too will only take a couple minutes- even less
then toasts- the sugars in the figs darken quickly!
After about 1 minute, check a fig… if needed, leave on a wee longer, otherwise
remove figs and sat on a cutting board to cool
By now bread should be done too…
Remove and let cool
Cut figs into little thin slices
Smother each slice of toast with goat cheese
Now top each toast with sliced figs
You may not end up using all of your pieces- I found that I used
the nice fleshy middles and then just ate the ends
Plate and garnish with rosemary sprigs, if wanted
Now pour the (warm) sauce over figs and over plate- toasts will soak it up
Yummm… eat and enjoy!!
