I feel like I’m drowning in greens right now. I just can’t keep up! Every week, my CSA farm gives me a huge assortment of kale, chard, collard greens, arugula, lettuce, bok choy, etc. How oh how am I to use them all up in seven little days, and then do it all over again!!? Not complaining, ’cause I’m sure I’ll miss it when it’s done… but let’s just say I’ve been doing a lot of stir frying lately 😉 So when I got a new box this week, I went right home and came up with the first thing I could do with some greens that was not stirred, fried, or cooked in any way. Hummus wraps!! I love the hummus-veggie-feta combo on anything- tortillas, pitas, sandwiches… so why not in greens?! Much healthier, super light, and extremely tasty!!
I kind of feel silly even writing a recipe for this- it really doesn’t need one. I should just say, “Get some veggies, some greens, cut, and wrap!” But I’m not, ‘casue it’s me, and I like to babble… so here you go for those who want it 😉
These are super quick… you just chop up some veggies, get out some hummus and feta, and roll up some greens. Not only are these raw delicious health in a swiftness, they’re easy clean up, too.
I used lotsa yummy veggies, but kept it pretty classic- carrot, cucumber, avocado, hummus, feta, and micro greens. Micro greens are like little sprouts of various little plants… love ’em!! You could add bell pepper, tomatoes, beets… even quinoa if you wanted a more substantial wrap! Do whatever- it’s pretty much all healthy and delicious!!
If you have a Trader Joe’s near you, I highly recommend their Mediterranean hummus. Ummmm, to die for. Making your own is fun, too, but if the point is quick and easy, theirs is oh-so-good!!
For 2 Wraps…
INGREDIENTS
2 medium carrots
1 small cucumber
1/2 avocado
micro greens or sprouts
feta cheese, few slices or little pile of crumbles
2 collard green leaves (or kale/other large leaf green)
salt and pepper, to taste
DIRECTIONS
Prep veggies and feta- I grate my carrots, slice my cuke and avo, and
then slice/pseudo crumble my cheese… any prep will work!
Collard greens tend to have large tough ribs… if you turn them face down, you’ll see it sticks up.
Take a knife and slice as much off as you can- makes it easier to enjoy when eating 🙂
Then cut off any extra stem so you just have nice flat leaves
Dollop about a hefty tablespoon of hummus on each leaf
Followed by about 2 tablespoons or so of grated carrots
Top with a few cuke slices
And then feta… yummm.
Avos next…
Then greens
Sprinkle with a wee salt and pepper…
And then roll!
I roll mine like burritos- folding sides in and then rolling up tightly
Slice and enjoy!!
