These super simple turkey meatballs are easy to make and even easier to enjoy. Stuffed with smoked mozzarella, they have a smoky flavor that’s almost reminiscent of bacon… it’s oh so good. And unlike most meatballs, these have no flour or other fillers whatsoever… just meat, egg, some herbs, and a little cheese keep these tasty little guys moist, in tact, and healthy! Prep is minimal, and the cook-time is less than ten minutes! These quick-to-make smoky little treats have become a favorite in my home… they’re amazeballs I tell you.
I made these as simply as I possibly could… with as much flavor as I could! Most meatballs have breadcrumbs and/or flour- not these. They are gluten-free, very light, and extremely tasty without a gazillion ingredients 🙂
Another added bonus… this is inexpensive to make. A few bucks for the meat, couple bucks for the cheese, and the rest is pretty standard… ingredients you likely already have at home. If you don’t have herbs de Provence- it’s just a mix of rosemary, thyme, marjoram, and a couple of other yummy herbs (use what you have or make your own like this).These are made a lot around here… for a midday snack, football game food, or as hors d’oeuvre for a potlucks and BBQs! They’re so simple and easy- you’ll see… 😉
1/2 lb. ground turkey breast (or other ground meat)
1/2 cup diced yellow onion
1 garlic clove, minced
1/2 tsp salt
1/4 tsp pepper
1/4 tsp herbs de Provence
1 tbsp fresh basil
1 tbsp Parmesan cheese (grated/powder type)
1 egg
1/2 cup grated smoked mozzarella
olive oil, couple tbsp for sautéing
DIRECTIONS
Finely chop the onion, garlic, and basil and grate the cheese
In a bowl, add the onion, garlic, basil, Parmesan,
salt, pepper, herbs de Provence, and meat
Loosely mix it together (you don’t want to over-handle the meat)
Add the egg
Using your fingers, mix it all together
Now you’re ready to stuff!
Using a tbsp measuring spoon to help you make them even,
scoop some meat into the palm of your hand
Create a small hole in the center of the ball
Add a generous pinch of grated cheese to the center
Wrap the meat around the cheese until its sealed in and you’ve formed a smooth ball-shape
Continue until all meatballs are stuffed…
Depending on how large your meatballs are, it should make about ten meatballs
Heat olive oil in a pan over medium heat
Add the meatballs…
Make sure not to overcrowd them- if needed, cook them in batches
Cook them on each side for about 3 minutes, until browned and completely cooked through
For larger meatballs, you may want to cook the sides, as well 🙂
That’s it! Once done, place a toothpick in them if you’d like and plate…

- Add the egg… using your fingers, mix all of the ingredients
- Using a tablespoon, scoop up the meat mixture and place it in the palm of your hand… press a small hole in the center (like a small bowl)
- Add a generous pinch of grated smoked mozzarella to the center and then seal it up by enclosing the meat around the cheese
- Continue until all meatballs are stuffed
- Heat olive oil in a large pan over medium heat… lay the meatballs in the pan (do not overcrowd them- you may have to do this in batches). Cook them for about 3-4 minutes on each side, until golden brown and completely cooked through
- Once done, serve them on a plate with toothpicks (optional). That’s it… enjoy!
