For the dipping sauce…
1 tbsp olive oil
1/2 onion, finely chopped
2 garlic cloves, minced
1/4 tsp oregano
1/8 tsp basil
1/8 tsp thyme
1/8 tsp salt
1/8 tsp pepper
3 tbsp tomato paste
6 tbsp water
*If you have leftover sauce, it makes a great pizza or pasta sauce!
DIRECTIONS
Preheat oven to 350 degrees
Quarter cauliflower head and remove any leaves
Place grated cauliflower in a microwaveable bowl
Heat olive oil in a pan over low-medium heat
Stir in onion and garlic and let cook for about 5 minutes
Then, when onions and garlic are slightly cooked, add in spices (oregano, basil, and thyme)
Stir and let cook for another 5 minutes or so
When warm and lightly bubbly, you’re ready to go!
Taste and adjust seasonings as wanted
Scoop sauce into a small bowl for serving

No microwave in my house – have you tried cooking the cauliflower on the stove top?

I haven’t yet, but I plan to soon! I imagine that warming it up in small pot over the stove wouldn’t be a prob at all… please let me know what you think if you try it out! 🙂
