Who doesn’t like cookies?! I love all kinds- peanut butter, oatmeal, chocolate chip, monster… it’s all good. Thing is, I often feel a wee crapioso (yes that’s a made up word… I do that sometimes) afterwards ’cause I have no- like really absolutely none- self-control. I can sit down and eat an entire batch of cookies no prob. So I have been trying lately to come up with little ways to get my cookie fix without the associated guilt. A while back, I made some yummy sunflower seed butter cookies that were tasty, light, butter & gluten-free version (click HERE to see). So I adapted that recipe to make myself a little treat that would make my belly happy without making my bottom do all that growing 🙂
I made a few changes to the sunflower seed butter cookie recipe to create myself a little peanut butter treat. First, they have peanut butter not sunflower seed butter (I love peanut butter cookies!). Then I omitted eggs- wasn’t sure of the success I would have, but the eggless batter worked like a charm. I made a few other little tweaks too, but there’s still coconut, walnuts, and lotsa love!! No butter flour, or eggs… it’s like you’re not even eating cookies! Hope you enjoy as much as I did 🙂
If you’re using salted peanut butter, don’t add extra salt… these little guys are pretty flavorful on their own- I’d hate for you to bake yourself a cookie that’s too salty to enjoy properly!
Makes 8 small cookies
INGREDIENTS
1/2 cup peanut butter (crunchy unsalted)
1/2 cup shredded coconut
1/4 cup walnuts, chopped
1/4 cup coconut sugar or brown sugar
1 tbsp maple syrup
1/4 tsp vanilla
1/4 tsp baking soda
1/8 tsp salt (error on light side- between 1/16 and 1/8)
*if using salted peanut butter, omit salt completely
DIRECTIONS
Preheat oven to 350 degrees
Get a large mixing bowl ready and scoop peanut butter in
Add all of the remaining ingredients
I suggest premixing the salt, baking soda, and baking powder
together first so that the dry ingredients are well-mixed, but not a huge deal if you don’t 🙂
Stir ingredients until smooth and everything is nice and mixed in there
Using a tablespoon (to get even-sized cookies), measure out little balls of cookie dough
Place on a lightly greased baking sheet
Bake at 350 degrees for about 12 minutes, until golden and cooked through
Enjoy!!
