Whew, it’s been a long minute since I’ve posted- my apologies! I’ve been traveling this summer- road trip to Montana, camping trips, and lots of good nature fun. But that doesn’t mean I haven’t been craftin behind the scenes! I’m here today with one of my morning faves… waffles. ♥
I’ve been using Otto’s Cassava Flour for a while now… it’s been a great sub for regular wheat flour- tortillas, pizza, breads, pancakes- you name it! But most of all, I’ve been lovin’ some cassava waffles! I’ve made savory waffles, sweet waffles, fruit waffles, all kinds of waffles. But on a slow Sunday morning like this one, we couldn’t resist these super simple blueberry guys. They’re easy- no fuss- always tasty.
I’ve found some pretty amazing waffle recipes in my day, but when I’m hungry, I want food stat- no 14-ingredients lists- no multiple steps. I just want to mix things together and eat in a jiffy. This is my go-to waffle recipe for quick whipped up goodness.
I personally like to let the blueberries to be the sweet touch to these, but if you’d like a more traditional sweet waffle, add vanilla and a smidgen of honey to the mix. A splash of cinnamon is always good too. 😉
serves four
INGREDIENTS
1 cup cassava flour (I use THIS one)
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 eggs
1 cup milk (I use whole)
1/4 cup ghee or butter, melted
1/2 cup fresh blueberries
optional: add 1/2 tsp vanilla extract, a pinch of ground cinnamon, a smidgen of honey, or whatever else you’d like to make them the tastiest to you!
DIRECTIONS
Mix dry ingredients together
Add the eggs- prewhisked, milk, and ghee or butter
Lightly stir until smooth, then add blueberries
Fold them into the mixture, then you’re ready to go
Lightly grease waffle iron with ghee or butter
Pour some batter on there…
Cook as directed, until crispy to your liking
Top with butter, maple syrup, blueberries, and/or whatever else you may like!
Devour and enjoy 🙂
