For the last few summers, this snack has been one of our fave go-to’s. Fig city is my favorite city… as you’ve probably noticed if you follow my Insta. 😉
Every fig season, the grill comes out. I LOVE grilled figs. They get all caramelized and extra delicious-like. Ma fave. And while it may seem strange to those new to the idea, figs make an awesome addition to many savory classics. Sweet + savory = bomb diggity. Eeek, don’t think I’ve said that since high school. Moving on…
You could absolutely make this with your favorite pizza crust (GF or not, depending on your preferences), but I actually love using a thin lavash. Lavash is a light, crispy flatbread. It’s pre-cooked- think large flour tortilla or super thin pizza crust, so it makes for amazingly light little pizza squares. For GF-ers out there, I’ve heard the Otto’s Cassava flour tortilla recipe makes for a great thin crust. I love that stuff!

Whether you make it or buy it… ’cause let’s face it, sometimes we just all need something easy. ♥
makes one flatbread or pizza… no need to measure things for this, eye-balling works great 😉
INGREDIENTS
toppings…
small handful fresh figs, plus olive oil to grill
handful fresh arugula
a few slices prosciutto
goat cheese crumbles
for the ‘caramelized’ onion base…
1/2 large yellow onion
1/2 tsp dried thyme
1/4 tsp salt
drizzle balsamic vinegar
2 tbsp olive oil, ghee, and/or butter
your favorite flatbread or pizza crust, pre-cooked (I use lavash)
optional: fresh basil and crushed red pepper
*if you want a cheesier version, grated mozzarella, fresh mozzarella balls, or grated parmesan all work well
DIRECTIONS
Preheat grill to high
Begin with onions… then while they cook, you can grill the figgies
Thinly slice onion
Heat oil/ghee/butter in a pan over medium heat
Add onion, salt, thyme, and a splash of balsamic
Cook it all down, stirring often, until onions are soft and slightly caramelized- approx 10 minutes
Lower heat a tad as things begin to brown
(Proper onion-caramelizing takes a long time… this is a nifty short version that’ll give you a similar taste)
Slice them in half, then brush each face with olive oil
Place face-down on the grill… just for a few mins or so, until grill marks have formed
(If you have a sticky grill, it really helps to oil the grates beforehand)
Remove and let cool a smidgen
(Keep that grill on if you’re grillin’ the pizza too!)
Why grill them you ask?
Grilling fruit enhances the flavors- the sugars caramelize, creating a stronger oomph of tasty
Of course if you’d prefer not to, totally cool too…
Cut figs into quarters, slices, or whatever floats your boat
To assemble…
Get your crust ready- I use thin lavash… they’re light and crispy- perfect for something like this
Spread the onion all over the surface… get all that flavored oil/butter on there too!
I would typically have more on there, but someone got hungry while the onions were cooking and munched 😉
Add small strips of prosciutto
Add grilled figs
Sprinkle goat cheese all over the top
If adding extra cheeses, do so now 🙂
Carefully toss the whole thing onto the grill
(If you’re not grilling it, bake in a pre-heated 400 degree oven for approx 10 minutes)
Cover and cook for a few minutes, until edges are crispy and golden brown
(Time will vary depending on heat levels)
Don’t you want to eat it already?
But don’t… one more step! 😉
Spread a large handful of fresh arugula all over that guy…
It’ll wilt as it warms, so add more than you think you should 😉
Optional: sprinkle some fresh basil or crushed red pepper on there, if you’d like
