It can feel silly writing up a recipe for something as simple as this… but, if you’re anything like me, a couple of pictures and simple how-to’s can really help inspire. I whip up these little snacks on a stick a lot these days. For little gatherings, large potlucks, game days, or just a little bite to go along with din, these easy skewers seem to please all. You really can’t mess them up, which I love.
If it’s not grillin’ season, just plop ’em in the oven at 450 degrees for 10 or so mins. Can’t go wrong. 🙂
no need to measure anything for these… just make the batch as big or large as you like 🙂
INGREDIENTS
small potatoes, any color
red onion, roughly chopped
your fave pesto (see my dairy-free version here)
optional: fresh basil leaves for garnish
*I like these skewers… they’re short, sturdy, and just the right size 🙂
DIRECTIONS
Preheat grill to high
Parboil potatoes in lightly salted water
Roughly chop onion
Add all to a bowl, then toss in pesto
If wooden, soak skewers in water for at least 10 minutes
Skewer taters and onion
Continue until all veggies are skewered
Toss them on grill for approx 5 minutes, flip, then cook until golden brown
It can help to oil up the grates… this grill is super-used shall we say, so a little oil does a lot of good
That’s it!
Remove them from grill
Sprinkle with some chopped fresh basil over the tops
Optional, serve with a little bowl of extra pesto on the side or drizzle a tad more over the tops…
