This time of year is prime for food-lovers… everything is growing!
Tomatoes are ripe, squash are popping up on vines right and left, stone fruits are filling the markets with color, and figs… ahhhh figs. The figs they are boomin.
I was outside of Chico, Ca last weekend visiting my fam. They live out in the country, right on a river deep down a canyon. I love it. Whenever I go, I feel like I get a full retreat from the world. Pure nature, fresh eats, sunshine, wildlife (we had a bear join us for dinner on Saturday!) the sound of the river, and of course, my crazy family’s wildly intriguing humor and charm.
But it’s the food. Oh that food. My mom’s garden is amazing. Plus, she has friends who give her fresh goat milk to make her own yogurts and cheeses, chicken eggs weekly, and wine made fresh from the barrel.
But every fall it’s the fig that become the stars. They line the dirt road that zig zags through the canyon. So pickin’ we go. Every single day. I brought home so many figs it’s crazy! A huge box full!! So this week, I’m getting my fig on fierce.
This is one of my many figgy little snacks this week. I’ve been loving it. Whether you use figs, peaches, mango, or whatever is in season… it’s quick, easy, fresh, and seriously tasty. Highly recommend as a finger food appy or sweet treat.
absolutely no need for measurements here… just assemble to your heart’s desire
INGREDIENTS
fresh figs and/or peaches
handful af pistachios
fresh ricotta cheese (or Greek yogurt)
drizzle of honey
optional: a sprinkle of cinnamon
DIRECTIONS
Slice an X into the tops of figs
Don’t slice all the way down to the bottom- just enough to create a little pocket
If using peaches, slice into wedges, then add a couple extra little slits, like notches
Smash pistachios with the bottom of a cup or jar to crumble
No need for Hulk smashing here… a rough crushin’ is great
Dollop some ricotta into each fig pocket, or onto each peach slice
For figs.. use your fingers to open up the pocket,
then once filled, you can squeeze the sides to get it all up in there!
Plate filled fruit
Drizzle a little honey over the tops…
Sprinkle some crushed pistachios over them, then a powdering of ground cinnamon if wanted
Do the same to peaches…
Then serve, devour, and most of all enjoy!
